Banana Crumb Cake Recipe

I always have bananas

We buy a lot of bananas (apples too... but that's for next week's post). Every few weeks I find myself with a few bananas that are just too dark to eat so I am always baking them into something.

This month I wasn't feeling the usual banana bread or banana muffins, so I decided to make something a little different...

 And Oh Boyyy... It was a good idea - because it was DELISH!

This cake is moist and has a light banana flavor. It is not the type of cake you would serve for a birthday party - nor would you frost it, but it certainly IS a treat.

This is great to pair with your coffee or tea or just a big glass of milk.

The streusel crumb has a nice crunch and has a light cinnamon flavor - MMMMMMmmm......

If you look in the picture below you can see there's even a thin layer of steusel baked into the center (once baked, the crunchy texture is only on the top).

You only need a sliver of this to be satisfied. So you can certainly get a lot of servings out of this ~ especially if you are sharing. According to Wilton, a 9x13" cake with slices 1.5" x 2" will provide  a total of 36 servings.

Banana Crumb Cake Recipe

 Yields appx. One 9x13" (1-1/2") cake

INGREDIENTS

FOR THE CAKE:
3 ripe Bananas
1/2 cup (1 stick) softened unsalted Butter (at room temp; not melted)
2 cups Granulated Sugar
2 large Eggs
1 Tbspn Vanilla Extract
1 cup Milk (2% or whole)
1 tspn Ground Cinnamon
1/2 tspn Ground Nutmeg
2 cups All Purpose Flour
1 Tbspn Baking Powder
1 tspn Salt

FOR THE CRUNCHY STREUSEL "CRUMB":
1/2 cup (1 stick) cold unsalted Butter 
1 tspn Ground Cinnamon
1 1/2 cups packed Light Brown Sugar
1 1/4 cups All Purpose Flour

DIRECTIONS

Preheat your oven to 350 degrees F.
Coat a 9x13 inch pan (at least 2 inches deep) with anti stick baking spray.

In a large bowl mix together: the bananas and butter. 
Then add: the sugar, eggs and vanilla extract. Mix until fully incorporated.

Then add in the milk. Again, mix until fully incorporated.

In another dish mix together: the cinnamon, nutmeg, flour, baking powder and salt. 

Slowly add the flour mixture to the banana mixture. Once everything has been incorporated, set aside. 

It's time to work on the crumb mixture...
In another dish: cube the cold butter. Add the flour, cinnamon, and light brown sugar. Using the back of a fork - "squish" the ingredients together. Once everything looks like it is well incorporated (it should have some chunks here and there) it is time to get your cake in a pan...

Pour about 1/3 of the cake mixture at the bottom of the pre-greased baking pan.

Next, evenly sprinkle about 1/3 of the crumb mixture on top of the batter layer.
Pour the remaining cake batter on top, slowly, so you can cover the first crumb layer.

Lastly,  sprinkle the remaining crumb mixture evenly over the top of the cake.


Pop it in the oven (middle rack) and bake for about 50 minutes. Test by inserting a toothpick in the center, it should pull out clean.
